After looking at all my cocktail ideas I decided Zombies were going to be the next ones to try. Since it's quite a tropical flavoured cocktail, I really wanted to include pineapple, but I don't love it in cakes, hence the pineapple lolly decoration on the top!

Lemon Rum Pound Cake

Hello! It has been forever. I haven’t actually been feeling very inventive of late, so I’ve been going back to some basic baking. Super tart lemony goodness in baking is one of my favourite things and this pound cake is no exception. Smitten Kitchen has been one of my favourite food blogs for years and I just slightly adapted Deb’s recipe to include rum!

Rum! Ginger! Lime! YUM! That's about all the intro I've got for today. It's been a while since my last post and I actually made these babies last year, but somehow time has run away from me. Is it really March already? Steve's been on holidays for what felt like forever (was actually about a month) and work colleagues started asking where the cupcakes were. I'd love to blame it all on Steve's absence, but I thought I'd give everyone a break from sugar in January. I just made salted caramel cupcakes though and they went like hotcakes, so I guess I'm baaack!

Mai Tai // Rum Cupcakes with Cream Cheese, Orange and Lime Icing

Mai Tais! They're tropical and delicious. After making these I realised they're pretty similar to the mojito cupcakes since I left out the almond kind of flavour (I have bad, bad times with anything fake almond like marzipan. Gross, gross, gross.) Oh well, these were still yummy without almond! You could add in some chopped almonds to the cake mixture for some extra crunch.

It's Christmas time! Part of my heart is still in London, so I still associate mulled wine with Christmas time. Also, a really great long weekend in Berlin one December (I still remember that half a duck dinner Lisa)! It was a bit of a no-brainer for me to try and merge Gl├╝hwein (mulled wine) and cake. Steve has a great recipe for mulled wine that involves roasted macadamias and "the secret: a LOT of sugar", but that sounded too good to bake into a cake. I also doubt you'd get any of the macadamia nut flavour coming through. So Jamie Oliver's recipe would have to do.
