These days I think just about everyone has at least one friend who is vegetarian, vegan or has food allergies. I wanted to thank Emily, the amazing talent behind our logo, and she recently became vegan and espresso martinis are her faaavourite cocktail. So trying vegan espresso martini cupcakes to make for her was a no brainer!

I slightly adapted the recipe from Serious Eats and I really just swapped out the espresso powder for more hardcore ground coffee beans. Pow, pow!

Vegan Coffee Chocolate Cupcakes with Vegan Buttercream Icing
Makes 12

INGREDIENTS
  • 1 1/2 cups all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups sugar
  • 2 tablespoons ground coffee
  • 3/4 cup freshly brewed coffee
  • 1/4 cup Kahlua
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
DIRECTIONS
  1. Preheat oven to 180°C and line your muffin tin with cupcake cases.
  2. In a large bowl, whisk together flour, cocoa, baking soda, salt, sugar, and ground coffee until combined.
  3. Stir in coffee, Kahlua, vanilla, and vinegar until batter is formed.
  4. Fill each case 3/4 full with batter and pop into the oven.
  5. Bake until a wooden skewer or cake tester inserted into the middle of a cupcake comes out clean – about 18 minutes. Transfer to a wire rack to cool.

VEGAN BUTTERCREAM ICING
I used a recipe from VeganBaking.net but didn't put in the almond essence, but I didn't miss it! I used Nuttelex which was a bit too salty, so make sure you use unsalted margarine!

INGREDIENTS

  • 1 cup regular vegan butter or margarine at refrigerator temperature
  • 2 cups icing sugar
  • 1 tablespoon + 2 teaspoons of non-dairy milk
  • 3/4 teaspoon apple cider vinegar
  • 3/4 teaspoon vanilla extract
  • Pinch salt

DIRECTIONS

  1. Make sure the margarine is cold and whip it until it's smooth. Should only take about 30 seconds.
  2. Beat in the icing sugar.
  3. Then beat in the rest of the ingredients and mix until smooth and fluffy.
  4. Pipe onto your cupcakes!
